This cheese is characteristic of a true goat’s milk cheese. It feels slightly hard in the mouth at first, then it’s texture turns moist, heavy, and clay-like as it blends and melts in the mouth. The taste of the cheese is slightly sour and salty, with some sweetness. The aroma created by the goat’s milk and the mould of a dark cellar remains. Great when eaten with a Sancerre or Saumur Champigny.
