This cheese appears hard, black and knobbly on the surface. It’s smell is strong and the inside has a meaty texture, with a robust flavour. It tastes a little salty and has balance of sourness. The delicious aroma of milk enhances the taste. With hot croutons on a salad made with wine vinegar, this cheese makes a good starter. Best eaten with a Sancerre or a Chinon.
