The Fleur du Maquis is a ewe soft cheese covered with aromatic herbs (rosemary, fennel seeds, juniper berries and chillies. It has a very particular taste, full of floral aromas and feels a bit mild ion the mouth. All the Corsican character is expressed in this well-done marriage of ewe milk and spices, a tribute to the vegetation that carries this hilly island.
