With Beaufort, this cheese, also called gruyere du Comté, is the richest and most popular cheese in France. When it is cut it reveals a firm and supple pâte that melts in the mouth, leaving a sweet taste. The salt is strong but balanced and the flavour has a nutty tang. Comté is a nourishing and versatile cheese: it is a good accompaniment to an aperitif, or can be eaten in a salad, with fruit, in a sandwich, or cooked in croque-monsieur or as fondue. Great when eaten with a Meursault or Saumur Champigny
