A piece of cantal feels heavy and moist. It melts in the hand when kneaded. The salt that is added to it brings out the full flavour of this cheese. A well ripened Cantal has a strong taste, while a young cheese has the sweetness of a raw milk. Great when eaten with a Chardonnay du Bugey or a Beaujolais.
